I made paleo fish tacos tonight for dinner as adapted from Paleo Comfort Foods. All day I was thinking that I wanted pizza or pasta or something like that, so I decided to just spend the time to make these after work to try to satisfy me. I decided on these because I thought they’d have a good flavor punch, and I was right!
I didn’t follow directions very well, but it thankfully turned out tasty. I used cod as the fish, cooked in a skillet with coconut oil, ancho chili powder, lots of minced garlic, pepper, salt. Serve on lettuce with avocado (or guacamole) and salsa. Top with cilantro and spritz with a squeeze of lime. Yum!
