The theme for today is MEATBALLS.
I know I talk about these meatballs a lot, so I thought I’d show you.
The recipe is from the fabulous Linda Sue at Linda’s Low Carb Menu’s and Recipes.
I do a few things different from miss Linda though: extra dry mixed onion, some onion powder, italian seasoning and 3/4-1 cup shredded Parmesan. I also don’t rinse them- I use a roasting pan, so the grease just goes to the bottom. On average, it takes mine 18-20 minutes at 375 to make. And I’m completely addicted to the Kroger Private Selection Vodka Cream Sauce. It had some of the lowest carb counts of any of the pre-made tomato based sauces in the store, and I love the cream flavor that cuts the acidity of the tomatoes.
So, what’d I eat today?
B: meatballs! coffee with cream.
L: grilled chicken salad with ranch dressing. Small chili with cheese. Venti black eye with heavy cream.
D: meatballs!
