Well, unfortunatley I’m feeling a bit under the weather. Just a twinge of a sore throat and pretty tired. Hopefully I’ll pep back up soon!
B: 2 slices of harvest crunch bread (flax and whole grain from Great Harvest) with natural peanut butter (with flax seed oil and hemp in it) Talk about fiber.
L: 2 jr. bacon cheeseburgers (no buns), large chili with cheese from Wendy’s and a venti black eye with heavy cream from Starbucks
D: meatballs!
Recipe: Meatballs! (I don’t take credit for these- I think they are from Linda Sue’s wonderful site)
Mix together thoroughly: 1 lb. ground beef, 1 lb Italian sausage, dried minced onion (I use lots) and garlic powder (again- can you ever have enough?), 1/2 shredded Parmesan cheese and 2 eggs. I bake on a roasting pan so the fat goes away and I don’t have to worry about it. 375 for 18-20 minutes. I eat it with a low sugar marinara and some melted mozzarella. Nom nom!
