L: chicken caesar salad, cajun baked fish (both from Whole Foods Cafe), slice of low carb pumpkin cheesecake

Margie’s Mediterranean Slow Cooker Chicken
- 2 tbsp extra virgin olive oil (EVOO)
- 1/3 cup dry white wine (I used more like 1 cup- turned out great)
- 1/3 cup sun dried tomatoes – chopped
- 2 garlic cloves (minced) I used 3- the more garlic for me, the better!
- 2 tsp. onion powder
- 1 tbsp oregano
- ½ teasp. black pepper
- ¼ teasp. kosher salt
- 2 pounds boneless skinless chicken breasts
- 2 pounds Roma tomatoes – quartered (I used a package of grape tomatoes)
- 1 can black olives
- 1 cup crumbled feta cheese
Mix everything up in the slow cooker except for the chicken and feta cheese. When it’s mixed well, throw in the chicken and turn on low for 8 hours. When finished, you can shred it to soak up the juices or leave the chicken as it is. Crumble feta cheese on top and enjoy!
It was sooooooo flavorful and you could even smell it in my garage when I got home. So good. Don’t worry about all the measurements of the spices if you don’t want to- I didn’t have the measurements when I made it, so I just threw in what I thought would work and it turned out great.
