B: The sausage egg casserole I prepared last night. Will post recipe below.
L: Culvers triple bacon deluxe and salad with ranch
D: cooked some stew beef in crock pot with gravy, onions, peppers, mushrooms, garlic. Husband ate it on rice, I ate it by itself.

Sausage Egg Casserole
1 lb sausage
2 c. cheddar, shredded
1/2 onion, diced
1 pepper (any color you want), diced
small or grape tomatoes
1/2 c. heavy cream
6 eggs

Preheat to 350
Brown sausage with onions
Drain sausage/onions
Add peppers and tomatoes (if grape, cut in half, if other, diced in large chunks) to sauasage/onions, return to stove to cook out water of veggies
While that’s cooking, whisk eggs, heavy cream, salt and pepper
Drain sausage mixture, then pour into greased pie dish or square casserole
Layer the cheese on top of mixture
Evenly pour egg/cream mixture over the ingredients. It won’t cover it all completely, but is just enough
Bake about 45 minutes or until a knife inserted in the middle comes out clean.

I added mushrooms to mine also. Feel free to play with it- nothing set in stone!
